Good Evening All...

9:50 PM Thursday, September 18th

The Louisiana American Red Cross cooking trailer, "Henry's Kitchen" is still fully operating. It was decided since meals were consistantly needed, they would keep this kitchen open. Chef Jan Rost and her culinary students, along with Red Cross volunteers, continue to man this site. Kudos to Chef Jan and her students! Our San Antonio chefs who first began working "Henry's Kitchen" will soon be working the Texas kitchen!

The Texas American Red Cross cooking trailer, "The Spirit of America" is barely limping along. MAJOR logistical problems with this site. HUGE THANK YOU'S to Chef's Angela Medlock and Susan McDonald for rolling up their sleeves and making due in very difficult circumstances. Chef Debbie Bando has made sure they are in hotel rooms instead of the high school shelter.

The lead "boots on the ground" Texas American Red Cross person assures me, all ordered supplies and food for 60,000 will arrive sometime tonight. Chef Christina Perrington of San Antonio, will arrive tomorrow night and will be working with several other chefs who are coming in to get things organized, once all of the equipment, food, supplies, storage areas, refrigerator trucks, etc etc finally arrive. I trust Christina to get things organized and put a system in place, those of us who follow behind her, will easily be able to pick up and continue. Chef Christina has several years experience in the military along with military mass feeding...and has put together a calendar to schedule chefs to work...I will list Chef Christina's contact information at the end of this message...

FEMA is the hold up...I guess we should suggest to Michael Chertoff, possibly he and his lead people should enlist the ACF to teach them the fine lesson in off premise catering and then they'd be more efficient in their efforts. There are 22 Red Cross camps tonight in Texas waiting for their food, water, and supplies.

Be assured, the local bar in Silsbee Texas is doing a brisk business!

I plan to arrive along with a team of chefs from Longview Texas, this upcoming Monday...I will stay as long as needed...several other chef teams will arrive towards next weekend.

So far, the American Red Cross has come through with their end of the bargin by issuing purchase cards to our chefs who are working. It is finally coming together easily in Louisiana, now we need to aim towards that smooth transition in Texas.

It would be great if we had food donations from any of our suppliers... I can give them addresses for Louisiana or Texas...directions, etc.

Thank you to the main ACF office team for contacting ACF chefs in the affected areas. I have already received several emails and phone calls from chefs letting us know they are alright...I have not, as of yet, heard from any of our chefs requesting aid or are in need of additional help. It might be too soon to know this information ... it has only been 8 days since "Ike" hit Texas.

Chef Russell, you mentioned you'd like for me to put something on the ACF website...maybe you would pass this email along to have our IT people place this message on the website for our members to also be brought up to speed as to what has been happening in both Louisiana and now Texas. Most appreciated!

Hello from Kansas City to all of my brothers and sisters. We (The Greater Kansas City Chefs Association) are very proud of all of the compassion that members of the Central region share, not just in the time of need. But because of who we are and how we always try to do our part to make our communities a better place for everyone to live. I am always proud to be recognized as a member of the Central region. I Just want to thank Chef Lynn Krause and the ACF Disaster Relief team for agian stepping up to the plate and providing assistance to all by the continuous onslaught of hurricanes affecting our members. God speed to all and lets pray for our comrades in those areas. I also know that the San Antonio chefs have activley particpating in feeding many people outside of New Orleans and wish them luck as well!!

I thought the Vegas conference was fabulous - great seminars and lots of educational wisdom to bring home to my students.

I wanted to take the opportunity to congratulate all of the members of the Central Region that won awards at the National Convention in Las Vegas. Great job and I believe that our region took home the most awards of all! I'm so proud of not only the students from our region who were winners but all of you that were recognized. Photos and best wishes to come!!
