I found the same thing when I was aboard in February, space is limited so that make products availability small, but most like a little spicy or what we call regional cuisine. Since they travel all over the world it would be great to be able to help them try new dishes before they get there, so they can try something and not be afraid if the do not like it. Most sailors are young but eager to learn and that includes foods or cuisines.

Chef a great point about their menues. Their are a couple of options though for everyone. The biggest being, if you have a recipe that works and they can get the raw product then the Leading CS (LPO or LCPO depending on the command) can write a recipe out (called a local recipe) and their Food Service Officer (FSO) can sign it and it can be added to their Menu cycle. When I was in we utilized about 20-30 local recipes per menu cycle.

I was aboard the Thatch for a week and aboard the Boxer for two weeks. The main objective was to take the ingredients that they already stock but instead of repeating the same meal, change it up. Example if they alway make shrimp scampi try making a shrimp dish another way with some of the product they already have available. Their menus are pretty regimental so they really enjoy learning a new way to prepare it.

Hey Michael,

Are we still on for the IFSEA Conference in Vegas?

For others out there- I've been out to sea twice, once with the USS Thatch and off Bahrain with The USS Boxer.

Barbara...thank you for sharing that great piece of history with us. Too often, we are caught up in the present, and neglect to acknowledge our past.
