Chefs - I was contacted by Ocean Spray, asking to help them spread the word on a recipe contest they're sponsoring. Recipes must feature cranberries; winner receives $25,000 (and I understand there haven't been very many entries!). Recipes must be submitted by June 30...go to www.oceansprayfoodservice.com

It'd be great to see a Sodexo Health Care chef take home the bucks!

Chef Kester, here at ART we don't have a real smoker, so we use liquid smoke....most people can't taste the difference!

OK, chefs, by your geography alone this should be good: Going into the test kitchen in a couple of months and working on a barbeque promotion; regional and international flavors. With the realities of our business in mind, what would you like to see on the menu (entree, Innovations station, grill, deli, to-go)? Got a favorite rub, mop or sauce?
