It was great to have Chefs David Martin, John Pinney and Certified Master Chef Fritz Sonnenschmidt as our Judges for the competition!!!
I hope everyone had a great time!!

Bueno Tim...We will be doing the same for Cinco de Mayo. Taco Salad Bar with Tortilla salad bowls....Spanish Rice ...Action station we will be doing fajitas with fajita chicken and steak....Wish we planned better because Im sure we could have gotten Island Oasis to do virgin Magharitas.....next year

The CEC Exam is cancelled in Charleston...check the ACF Website for the next one in NC.

It's May, how about that not only is Cinco De Mayo on tuesday, Mother's Day is on May 10.
Tift is serving Tortilla Soup, a Fajita Bar, Mexican Rice, Flan, Taco Salad.

Mothers Day, Shrimp Scampi, Fried and Baked Chicken, Steamed Asparagus, Rice Pilaf, Collards, & Scalloped Potaotes.

Plus, on this Thursday we will be Doing Indian Cuisine.

We are BBQing and smoking our own at the unit. A great hit with the customers - we are smoking and BBQing pork butts (the favorite) , chicken , pork loin , ribs , turkey , and even cheeses. We have 5 custom BBQ sauces with the newest "White BBQin Chaos Sauce" which is unusual to most and growing fast in popularity!

Depending on where you are in the US; the color of the BBQ changes.

Mark Abbott is smoking his own pork butts and has some great sauces....I like a vinegar base sauce not tomato base but thats me....my customers like tomato.

For Pork, I like a Boubon Brown Sugar Glaze with a Mustard Sauce.

For Chicken, I like a Carmelized Onion, Tomato & Balsamic Relish
