I am a chef-instructor at Schenectady County Community College. I am the lead-instructor for Garde Manger, I also teach Classical Cuisine (the school's restaurant class), and Modern Culinary Trends and Techniques which will address healthy cooking techniques, Asian cuisines, Latin American cuisines, updating comfort foods for the 21st century. I occasionally teach a basic baking class and an advanced culinary fundamentals class.
My education has taken me from the classrooms of Schenectady County Community College with an AOS in Culinary Arts, into the classrooms and kitchens of SUNY Delhi under the tutelage of Tom Recinella (a mentor and friend), and then over to Boston University for a MLA in Gastronomy and Food Studies. Each year I try to take the time to attend a couple continuing ed classes through the CIA or other schools and I am looking forward to attending the Worlds of Flavor Conference as well as the Star Chefs conference, not to mention our own regional and national conventions through the ACF.
I am extremely interested in food and culture and their interaction. Most of my interests delve into the cultural history portion of the realm. Why have I gotten into this realm of food? I love to eat, I love to talk about eating and I love to find out why people eat certain things, particularly based on their cultural preferences.
My hospitality industry research interests include sustainability in the industry, foodservice safety, and consistency in the workplace. Much of my humanities based research and writing is concerned with cuisine history and sociology, especially associated with 18th - 19th century France and U.S.A.

James Beard - He had a similar passion for the concept of an American cuisine as I do.
Alain Passard - One of my favorite chefs to look to when it comes to the inspiration of working with vegetables.
Michel Roux - I would love to see where the inspiration comes from.
