Edna Lewis, We met in 97 at the SE Regional, she sat at our table for the "Groaning Board" the Chef Shadler put fourth. I would've liked to have known her better.
Mario Batali, Simply enjoy Italian food, & Mario can really dish it out.
Albert Uster, All of the great things that Albert did, it seemed he wasn't here very long? I liked his Military Mobile Bakery , wish it was still around. (I started my pro career at Ft. Lee Cooks & Bakers School, using similar equipment.)

I would love to use the traveling bakeshop as well. The latest is that Ciril Hitz is taking it cross country for a "on the road baking expo" although this is second hand information, I requested it to be transferred to the Charlotte campus (where I work)....
When I found out it was for sale, I jumped on the idea, they laughed at me at first, and eventually I found out that J&W procured it at the Providence Campus for the museum. I was kind of sad we didn't get it down here at the Charlotte campus so I created one in a virtual world in Second Life! I am a chef instructor and am also into all things technical (but definately not a digital native). I set up some bakeries and put together some hot spots for teachers and baking students in Second Life that evolve around culinary (eg:food safety-USDA, Food Science-Ohio State University-NPR, nutrition-Ohio State University, ecology/sustainability-MSU-others, and business marketing and managing-UNLV, Queensland Univ, Elon and others.
And I agree, Albert Uster will sure be missed!
I worked for Albert and I have some good news the bakery is still around. It is in the museum at Johnson and Wales, RI. Funny story, during the move Albert insisted on driving it. He got less then a mile away from the office and it died on the highway. The local news picked it up and it was all over the tv for blocking the road. That was what made Albert successful, go big or go home!
