Well yes Escoffiers complete guide to modern cooking and of course the acf student guide to acf competions, there is a pro one too, they have all the rules for judging, probably the best thing to do is take a competion class at school to help train…

Just wanted to say you have a ton of great photos that you have posted. I see the logo on the Chefs Jackets, but was wondering what the abbreviation stands for? Also are you working in one of the casinos or hotels?

- I was out in Las Vegas a couple of years ago for the ACF National Convention at the MGM with my family. We were happily suprised to see so many filipino restaurants and shops such as Goldilocks and Chow King (great seafood market you have). We just wish we had more options here around KC intead of having to travel to the Chicago area.
