I am a career changer that just entered the field. I have alot of front of the house experience helping my friend open his resturant but my back of the house skills is limited so I enrolled in culinary school. I know the risks and challenges of this profession and still want to do it anyway because I love food and I read Kitchen Confidential religiously because I just want to learn. Do you have any advice for a newby like myself?
I haven't found a mentor yet and I know that will come with the territory but I am afraid of getting stuck in a resturant I don't like when it comes time to graduate. When I say don't like- I mean Taco Bell or someother chain resturant that makes me question why I ever went to culinary school. Do you have any key advice to offer on how to be successful in my job searches and what to look for?
