Bruce, We do cooking classes the second Monday of every month. We do a 3 course meal and wine is provided. Some members come just to drink as much as they can, others actually bring note pads and pens and take serious notes. It is a well attended ...

I am the Executive Chef at Ridgewood Country Club in Waco, Texas. I have been here since September 2005 and have really come to love the Central Texas area. I relocated here from Fort Worth, Texas after spending 2 years at Trophy Club Country Club. I have had the privelige of working around the country working for some amazing people who helped create what i do today.

If you could have dinner with any three people who would it be and why?
Charlie Trotter- When you talk about creativity, excellence, and team concept this is what it is all about. Even though he is such an extrremely busy man he still spends a lot of time in the kitchen, he gives of his personal time to outside projects. He is such a gift to the culinary world.

Ferran Adria- To be able to pick the knowledge of this man, to try to understand through his ecclectness there is a simplicity about him. It would be fun to find out why/how he does many of the things that he creates.

Kent Rathbun- I have had the privelige to meet him on a few occassions and he is such a sincere person who does not mind sharing information. His Abacus Restaurant is an incredible experience to share with other friends/guests.
