All of us high school culinary arts teachers that are on the National Education Team for the Culinary Arts contest at National SkillsUSA feel that these young competitors are the future of the ACF. It is our hope that the ACF will begin to recognize the SkillsUSA Culinary Arts contest and award CE hours for this national competition as well as encourage the competitors to join the ACF as student members.
something I wish I would have done long ago is to be in the ACF apprentiship program. Check it out at acfchefs.org web site and go to careers. Also get in with a hotel, you probably will start out on the low end of the totem pole, but hang in there and work your way up...they have benefits...something you should have because insurance isn't cheap. If you have the passion and stamina, you should work your way up pretty fast..take on more responsibility than given and ask to help out wherever needed. That's my philosophy. Good Luck to you...also keep in touch with your chef instructors they can help out sometimes too. Even your intership could hire you. The Drake Hotel in Chicago wanted to hire me two weeks into my 6 week internship. I didn't want to live in Chicago. I asked the Exec. Chef to work in each department and he did just that for me...learned a hell of alot.
