BTW, can I ask everyone a favor?

There is a bill to be voted for here in Texas HB3282. Rep Gattis is the author.
Basically I feel it is the first step in gutting food safety laws from the cottage industry laws by taking out provisions for commercial grade surfaces and equipment, seperate entry to seperate kitchen, no inspections unless there is a FBI, etc.

Bascially it opens the door for anyone to bake, cook and sell out of their homes.

As an equipment dealer I am sure there would be a great interest in spring boarding some home / cottage based operations. However I have seen a number of commercial operations that were disasters relating to sanitation & cleanliness. Many of us would be amazed at what can go on out there. I think the kitchens could range from safe to hazardous. I would feel much better if sanitation was maintained across all food producing kitchens. May be the bill would need a training clause to encourage safe food handling & sanitation.

On the face of it, it sounds like a good idea. The more people share their creations, the better. Thinking about it more, I don't see a danger from aunt Sally selling her apple pies. The problems might come in when some cost-cutting restaurateur decides to compromise on hygiene & freshness.
